Salt and pepper, to taste

1 cup shredded cheddar cheese

1/2 cup sour cream

1/2 cup cooked bacon bits

1/4 cup green onions, sliced

1/4 cup unsalted butter

1/4 cup milk (optional, for creamier potatoes)

Directions:

Preheat your oven to 400°F (200°C).
Wash and dry the potatoes, then pierce them several times with a fork.
Bake directly on the oven rack for 50-60 minutes or until tender.

Heat olive oil in a skillet over medium-high heat.
Add steak bites and cook for 2-3 minutes per side, or until your desired doneness.
Set aside and keep warm.

Once the potatoes are done, cut a slit down the center of each and fluff the insides with a fork.
Mix in a pat of butter and a splash of milk if desired for added creaminess.

Shredded cheddar cheese

Sour cream

Cooked bacon bits

Juicy steak bites
