Caramelized Sweet Potato Chunks

Ingredients:
4 large sweet potatoes, peeled and cut into chunks
3 tablespoons olive oil
2 tablespoons brown sugar
1 teaspoon cinnamon
Salt to taste
Instructions:

Preheat your oven to 400°F (200°C).
In a large bowl, toss the sweet potato chunks with olive oil, brown sugar, cinnamon, and salt.
Spread the sweet potatoes evenly on a baking sheet lined with parchment paper.
Bake for 25-30 minutes or until they are tender and caramelized, stirring halfway through to ensure even cooking.
Serve warm as a side dish or a healthy snack.
