Ingredients

For the Gumbo:

  • 1 lb boneless, skinless chicken thighs, cut into bite-size pieces
  • 1 lb Andouille sausage, sliced
  • 6 cups chicken broth
  • 1 cup water
  • 1 cup sliced okra (optional)
  • 1 can (14.5 oz) diced tomatoes
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon paprika
  • ½ teaspoon dried thyme
  • ¼ teaspoon cayenne pepper (optional, for extra heat)
  • Salt and black pepper, to taste

For Serving:

  • 2 cups cooked white rice
  • 2 green onions, sliced
  • Fresh parsley, chopped

Instructions

  1. In a large heavy-bottomed pot or Dutch oven, heat the vegetable oil over medium heat.
    Gradually whisk in the flour to form a roux. Cook, stirring constantly, for 20–25 minutes
    until the roux turns a deep chocolate-brown color. Be careful not to let it burn.
  2. Add the chopped onion, bell pepper, celery, and garlic to the roux. Cook for 5–7 minutes,
    stirring frequently, until the vegetables are soft and fragrant.
  3. Stir in the chicken pieces and sliced sausage. Cook for about 5 minutes, allowing the chicken
    to lightly brown and the sausage to release its smoky flavor.
  4. Slowly pour in the chicken broth and water, stirring well to combine. Add the okra (if using),
    diced tomatoes, Cajun seasoning, paprika, thyme, cayenne pepper, salt, and black pepper.
  5. Bring the gumbo to a gentle simmer, then reduce the heat to low. Let it cook uncovered for
    45–60 minutes, stirring occasionally to prevent sticking and to deepen the flavor.
  6. Serve the gumbo hot over cooked white rice. Garnish with sliced green onions and fresh parsley
    for a fresh, vibrant finish.
