Hands down, the only cake my hubby will have for Easter!

Easter is a time for family, celebration, and of course, delightful treats. This No Bake Easter Swirl Cake is a perfect addition to your festive table. With its graham cracker crust and creamy filling, it’s a hit with both kids and adults. The pastel swirl effect, created with gel food coloring, adds a touch of whimsy and makes it a visual delight. It’s a no-bake wonder, meaning you can spend more time with your loved ones and less time in the kitchen.

No Bake Easter Swirl Cake

Servings: 8-10 servings

Ingredients

1 1/2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1/4 cup granulated sugar
2 cups heavy whipping cream
1/2 cup powdered sugar
1 teaspoon vanilla extract
8 ounces cream cheese, softened
Gel food coloring in pastel colors (pink, blue, yellow, green)

Directions

In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Mix until well combined.

Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Place in the refrigerator to chill while you prepare the filling.

In a large mixing bowl, whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form. Set aside.

In another bowl, beat the softened cream cheese until smooth and creamy.

Gently fold the whipped cream into the cream cheese until well combined.

Divide the mixture into four separate bowls. Add a few drops of gel food coloring to each bowl to create pastel colors. Stir each until the color is evenly distributed.

Spoon dollops of each colored mixture onto the prepared crust, alternating colors.

Using a toothpick or skewer, gently swirl the colors together to create a marbled effect.

Refrigerate the cake for at least 4 hours, or until set.

Carefully remove the cake from the springform pan before serving.

Variations & Tips

For a gluten-free version, use gluten-free graham crackers. If you have picky eaters, you can adjust the colors to their favorites or even make a single-color version. For a more tangy filling, add a tablespoon of lemon juice to the cream cheese mixture. You can also top the cake with fresh berries or edible flowers for an extra special touch.
