Stuffed Sweet Potatoes with Spinach

Stuffed Sweet Potatoes with Spinach, Mushroom & Feta
Ingredients:

4 medium sweet potatoes
1 tablespoon olive oil
1 small onion, chopped
2 garlic cloves, minced
8 oz mushrooms, sliced
4 cups baby spinach
1/4 cup crumbled feta cheese
1/4 cup chopped walnuts (optional)
Salt and pepper to taste
Instructions:

Preheat the Oven:
Preheat your oven to 400°F (200°C).

Prepare the Sweet Potatoes:
Pierce each sweet potato several times with a fork. Place them on a baking sheet and bake for 45-55 minutes, or until tender when pierced with a fork.

Sauté the Vegetables:
While the sweet potatoes are baking, heat olive oil in a large skillet over medium heat. Add the chopped onion and garlic, cooking until softened, about 5 minutes. Add the sliced mushrooms and cook for another 5-7 minutes until tender. Add the spinach and cook until wilted, about 5 minutes.

Mash the Sweet Potatoes:
Once the sweet potatoes are cooked, cut them in half lengthwise. Scoop out some of the flesh, leaving a shell. Mash the scooped-out sweet potato flesh with a fork.

Combine the Filling:
Add the sautéed vegetables, crumbled feta cheese, and walnuts (if using) to the mashed sweet potatoes. Season with salt and pepper to taste and mix everything together until well combined.

Stuff and Bake:
Spoon the mixture back into the sweet potato shells. Return the stuffed sweet potatoes to the baking sheet and bake for an additional 10-15 minutes, or until heated through and the filling is slightly golden on top.

Serve:
Serve the stuffed sweet potatoes immediately, and enjoy!

Tips and Variations:

Add Protein: For a heartier meal, add cooked chicken or crumbled bacon to the filling.
Spice it Up: Stir in red pepper flakes or chili powder for some heat.
Try Different Cheeses: Goat cheese, blue cheese, or a blend of your favorites work great as substitutions.
Make Ahead: The filling can be made ahead of time and refrigerated for convenience.
