- 2 pounds baby potatoes, halved
- 3 tablespoons unsalted butter, melted
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- Β½ teaspoon black pepper
- Β½ cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (optional)

- Preheat your oven to 400Β°F (200Β°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the melted butter, olive oil, garlic, Italian seasoning, salt, and pepper.
- Add the halved potatoes and toss until theyβre evenly coated with the buttery mixture.
- Arrange the potatoes cut side down on the prepared baking sheet.
- Sprinkle the grated Parmesan cheese evenly over the potatoes.
- Roast for 30β35 minutes, or until golden and crispy.
