Warm Potato Salad with Feta & Lemon-Garlic Dressing
Ingredients:
2 pounds baby potatoes (yellow or red), halved
2 tablespoons olive oil
Salt and black pepper to taste
1/2 cup crumbled feta cheese
1/4 cup fresh parsley, chopped
1/4 small red onion, thinly sliced
For the Lemon-Garlic Dressing:
3 tablespoons olive oil
2 tablespoons fresh lemon juice
1 teaspoon lemon zest
1 clove garlic, finely minced
1 teaspoon Dijon mustard
1/2 teaspoon dried oregano
Salt and pepper to taste
Directions:
Place halved baby potatoes in a large pot, cover with water, and add a generous pinch of salt. Bring to a boil, then reduce heat and simmer until fork-tender, about 10–12 minutes. Drain and let sit uncovered for a minute to allow excess moisture to evaporate.
While the potatoes cook, prepare the dressing. In a small bowl or jar, whisk together olive oil, lemon juice, lemon zest, garlic, Dijon mustard, oregano, salt, and pepper until emulsified.
In a large mixing bowl, toss the warm potatoes with the lemon-garlic dressing. Let sit for 5 minutes to absorb the flavors.
Add crumbled feta, parsley, and red onion to the bowl. Toss gently to combine. Taste and adjust seasoning with more lemon juice, salt, or pepper as desired.
Serve warm or at room temperature. Great as a side dish for grilled meats or Mediterranean mains.
