This low-carb parmesan cauliflower is a nod to that cherished recipe but adjusted to fit today’s dietary preferences. It’s perfect for anyone looking to cut down on carbs without sacrificing flavor. Tender, cheesy, and with a slight crisp, it’s bound to become a new family favorite.

This parmesan cauliflower pairs wonderfully with a hearty roast chicken or a simple grilled steak. Low Carb Parmesan Cauliflower

Servings: 4

Ingredients

1 large head of cauliflower, cut into florets
3 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 cup grated parmesan cheese
2 tablespoons chopped fresh parsley (optional)

Directions

Preheat your oven to 400°F (200°C).

In a large bowl, toss the cauliflower florets with olive oil, garlic powder, onion powder, salt, and black pepper until evenly coated.

Spread the cauliflower florets on a baking sheet in a single layer.

Roast in the preheated oven for about 20-25 minutes, turning halfway through, until the cauliflower is tender and starting to brown.

Remove the baking sheet from the oven and sprinkle the grated parmesan cheese evenly over the cauliflower.

Return to the oven and roast for an additional 5 minutes, or until the cheese is melted and slightly golden.

Transfer the parmesan cauliflower to a serving dish and sprinkle with fresh parsley, if using. Serve hot.

Variations & Tips

For a little extra kick, you can add a pinch of red pepper flakes to the cauliflower before roasting. If you love the taste of herbs, try mixing in some dried Italian seasoning along with the garlic and onion powders. And for those who enjoy a richer flavor, a light sprinkle of shredded mozzarella before adding the parmesan can take this dish to the next level.
