Honestly, the sauce is what takes this dish to the next level.

As someone who’s always juggling work and home life, I know the struggle of finding recipes that are both delicious and fit into a low-carb lifestyle. This baked chicken and biscuits recipe is a lifesaver for those busy weeknights when you want something comforting but don’t want to derail your healthy eating goals. Inspired by my grandma’s classic Sunday dinners, this version swaps out the carbs without sacrificing any of the flavor. It’s perfect for anyone looking to enjoy a hearty meal without the guilt.

This dish pairs wonderfully with a fresh green salad or some roasted vegetables like asparagus or Brussels sprouts. If you’re looking to keep things low-carb, a cauliflower mash would be a great addition to round out the meal. For a bit of extra flavor, consider adding a dollop of sour cream or a sprinkle of fresh herbs like parsley or chives on top.

1/4 teaspoon salt
1/4 cup unsalted butter, melted
2 large eggs
1/2 cup shredded cheddar cheese
1/4 cup heavy cream

Directions

Preheat your oven to 375°F (190°C).

Place the chicken breasts in a baking dish. Drizzle with olive oil and season with garlic powder, onion powder, paprika, salt, and pepper.

Bake the chicken in the preheated oven for 25-30 minutes, or until cooked through and juices run clear.

While the chicken is baking, prepare the biscuits. In a medium bowl, mix together almond flour, baking powder, and salt.

In another bowl, whisk

together melted butter, eggs, and heavy cream. Add the wet ingredients to the dry ingredients and stir until combined.

Fold in the shredded cheddar cheese.

Line a baking sheet with parchment paper. Scoop the biscuit dough onto the sheet, forming 8 small biscuits.

Place the biscuits in the oven with the chicken and bake for 15-20 minutes, or until golden brown.

Serve the baked chicken alongside the biscuits, and enjoy!

Variations & Tips

For a bit of spice, add a pinch of cayenne pepper to the chicken seasoning. You can also experiment with different cheeses in the biscuits, like pepper jack or gouda, for a unique twist. If you’re short on time, consider using pre-cooked rotisserie chicken and simply bake the biscuits. For a dairy-free option, substitute the cheese and cream with non-dairy alternatives like nutritional yeast and coconut cream.
