Ingredients:
For the Shrimp:
1 pound large shrimp, peeled and deveined
1 tablespoon olive oil
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 teaspoon salt
1/8 teaspoon black pepper
For the Bowl:
1 cup cooked rice
1/4 cup chopped green onions
1/4 cup chopped cilantro
For the Sriracha Mayo:
1/4 cup mayonnaise
2 tablespoons sriracha
1 tablespoon soy sauce
1/4 teaspoon rice vinegar
1/8 teaspoon garlic powder
Instructions:
Marinate the Shrimp: In a bowl, combine shrimp with olive oil, garlic powder, onion powder, salt, and pepper. Marinate for at least 30 minutes, or up to 2 hours.
Grill the Shrimp: Preheat grill to medium-high heat. Grill the shrimp for 2-3 minutes per side, or until cooked through.
Make the Sriracha Mayo: In a small bowl, whisk together mayonnaise, sriracha, soy sauce, rice vinegar, and garlic powder.
Assemble the Bowls: Divide the rice among bowls. Top with grilled shrimp, green onions, and cilantro. Drizzle generously with the Sriracha Mayo.
Tips:
You can use any type of shrimp you like for this recipe.
For a spicier sauce, add more sriracha or a pinch of red pepper flakes to the Sriracha Mayo.
