Greek Roasted Potatoes with Whipped Feta

Ingredients:
For the Potatoes:

1 ½ lbs baby potatoes, halved

3 tbsp olive oil

Juice of 1 lemon

2 cloves garlic, minced

1 tsp dried oregano

Salt and pepper to taste

For the Whipped Feta:

6 oz feta cheese, crumbled

1/3 cup Greek yogurt

1 tbsp olive oil

Juice of ½ lemon

Fresh cracked pepper to taste

Directions:

Preheat oven to 425°F (220°C). Toss potatoes with olive oil, lemon juice, garlic, oregano, salt, and pepper. Spread on a baking sheet and roast for 35–40 minutes, flipping halfway, until golden and crisp.

While the potatoes roast, blend the feta, Greek yogurt, olive oil, lemon juice, and black pepper in a food processor until smooth and creamy.

Spread whipped feta on a serving platter and top with hot roasted potatoes. Garnish with fresh herbs or a drizzle of olive oil if desired.
