Ingredients

– ½ teaspoon salt
– 1 cup sparkling water or coconut milk (cold)
– 1 teaspoon vanilla extract
– Vegetable oil (for frying)
– Powdered sugar (for garnish, optional)

For the Creamy Coconut Dipping Sauce:
– ½ cup coconut cream
– ¼ cup sweetened condensed milk
– 1 teaspoon vanilla extract
– 1 tablespoon lime juice
– ¼ teaspoon salt

Directions

1. In a mixing bowl, whisk together flour, cornstarch, sugar, baking powder, and salt.

2. Gradually add the cold sparkling water or coconut milk, whisking until smooth. Stir in vanilla extract.

3. Heat vegetable oil in a deep skillet or pot over medium-high heat until it reaches 350°F (175°C).

4. Dip each pineapple ring into the batter, ensuring it is fully coated.

5. Carefully place in the hot oil and fry for 2-3 minutes per side, or until golden brown and crispy.

6. Remove with a slotted spoon and drain on paper towels.

7. In a small bowl, whisk together coconut cream, sweetened condensed milk, vanilla extract, lime juice, and salt until smooth.
