Fluffy Pancakes

Ingredients:
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon granulated sugar
1 1/4 cups milk
1 egg
3 tablespoons melted butter (plus extra for greasing the pan)
1 teaspoon vanilla extract (optional)
Maple syrup and butter (for serving)
Instructions:
Prepare the batter:
In a large mixing bowl, sift together the flour, baking powder, salt, and sugar.
In another bowl, whisk together the milk, egg, melted butter, and vanilla extract (if using).
Gradually pour the wet ingredients into the dry ingredients, whisking gently until combined. Do not overmix; it’s okay if the batter is slightly lumpy.
Heat the pan:
Heat a non-stick skillet or griddle over medium heat and lightly grease it with butter or cooking spray.
Cook the pancakes:
Pour 1/4 cup of batter onto the skillet for each pancake.
Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
Flip the pancake and cook for another 2-3 minutes, or until golden brown.
Repeat with the remaining batter, greasing the skillet as needed.
Serve:
Stack the pancakes on a plate and top with butter and a generous drizzle of maple syrup.
Optionally, add fresh fruits like strawberries or blueberries for extra flavor.
