Low Carb Cheesy Spinach Taco Shells
Servings: 4
Ingredients
2 cups fresh spinach
1 1/2 cups shredded mozzarella cheese
1/2 cup grated parmesan cheese
1 large egg
1/2 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
Directions
1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
2. In a food processor, blend the fresh spinach until finely chopped.
3. In a mixing bowl, combine the chopped spinach, shredded mozzarella cheese, grated parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Mix thoroughly until well combined.
4. Scoop about 1/4 cup of the mixture onto the prepared baking sheet and spread it into a thin, round shape, approximately 5-6 inches in diameter. Repeat to make more shells, leaving space between each.
5. Bake in the preheated oven for 10-12 minutes or until the edges start to turn golden brown and the cheese is melted and bubbly.
6. Remove from the oven and let the shells cool for a couple of minutes before gently shaping them into taco shell forms. You can drape them over a wooden spoon handle or a similar object to achieve the taco shell shape.
7. Allow the shells to cool completely in the shaped form before filling them with your favorite taco ingredients.
Variations & Tips
For a different flavor profile, try adding some finely chopped fresh herbs like basil or cilantro to the mixture. You can also experiment with different types of cheese, such as cheddar or pepper jack, for a spicy kick. Another option is to add a pinch of red chili flakes or a dash of hot sauce to the mixture for some heat. If you’re not a fan of spinach, you could substitute it with finely chopped kale or another leafy green.
