Ingredients:
For the Carrot Cake Bars:
1 cup (240 ml) vegetable oil
1 cup (200 g) granulated sugar
1/2 cup (100 g) brown sugar
3 large eggs
2 tsp vanilla extract
2 cups (250 g) all-purpose flour
1 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp ground ginger
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 cups (200 g) grated carrots
1/2 cup (100 g) crushed pineapple, drained
1/2 cup (40 g) shredded coconut
1/2 cup (60 g) chopped pecans
For the Cream Cheese Frosting:
8 oz (225 g) cream cheese, softened
1/4 cup (60 g) unsalted butter, softened
2 cups (250 g) powdered sugar
1 tsp vanilla extract
For Decoration:
Green sprinkles
Mini carrot candies (optional)
Instructions:
Preheat the oven:
Heat to 350°F (175°C) and line a 9×13 inch (23×33 cm) baking dish with parchment paper.
Make the batter:
In a large bowl, whisk together the oil, granulated sugar, brown sugar, eggs, and vanilla until smooth.
In another bowl, whisk together the flour, cinnamon, nutmeg, ginger, baking powder, baking soda, and salt.
Gradually add the dry ingredients to the wet, stirring until combined.
Add the mix-ins:
Fold in the grated carrots, pineapple, coconut, and pecans until evenly distributed.
Bake:
Pour the batter into the prepared dish and spread evenly. Bake for 30-35 minutes, or until a toothpick comes out clean. Let cool completely.
Make the frosting:
Beat the softened cream cheese and butter together until smooth. Add powdered sugar and vanilla and beat until creamy.
Frost and decorate:
Spread the frosting over the cooled cake bars. Sprinkle with green sprinkles and add mini carrot candies if desired.
