Baked Cream Cheese Chicken Taquitos
Ingredients:
2 cups cooked, shredded chicken
4 oz cream cheese, softened
1/2 cup shredded cheddar cheese
1/2 cup shredded Monterey Jack cheese
1/4 cup sour cream
1/4 cup salsa (mild or medium)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon cumin
Salt and black pepper to taste
10 small flour tortillas
Olive oil spray (for baking)
Optional: chopped cilantro and salsa for garnish
Directions:
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
In a large bowl, combine the shredded chicken, cream cheese, cheddar, Monterey Jack, sour cream, salsa, garlic powder, onion powder, cumin, salt, and pepper. Mix until well combined.
Spoon 2–3 tablespoons of the filling onto the lower third of each tortilla and roll tightly into taquitos. Place seam-side down on the prepared baking sheet.
Lightly spray the tops with olive oil spray for a crispy finish.
Bake for 15–20 minutes, or until the taquitos are golden and crisp.
Serve warm with salsa, guacamole, or a sprinkle of fresh cilantro if desired.
