Avocado Toast with Poached Egg

Avocado Toast with Poached Egg & Smoked Trout 🥑🍳🐟
A gourmet take on classic avocado toast, featuring silky smoked trout, luscious poached eggs, and a sprinkle of spices on crispy toasted bread!

Ingredients:
2 slices sourdough or whole-grain bread
1 ripe avocado
1/2 tsp lemon juice
Salt & black pepper, to taste
2 eggs

 

 

 

 

 

1 tbsp white vinegar (for poaching)
2 oz smoked trout (or smoked salmon)
1/4 tsp paprika or chili powder
1 tbsp chopped chives (for garnish)
Directions:
1️⃣ Poach the eggs:

Bring a pot of water to a gentle simmer and add vinegar.
Swirl the water and gently drop in the eggs, cooking for 3-4 minutes.
Remove with a slotted spoon and drain on a paper towel.

 

 

 

 

 

2️⃣ Prepare the avocado mash:

Mash the avocado with lemon juice, salt, and black pepper.
3️⃣ Assemble the toast:

Toast the sourdough until golden and crispy.
Spread the mashed avocado on each slice.
Layer with smoked trout, then top with poached eggs.
4️⃣ Season & Serve:

 

 

 

 

 

Sprinkle with paprika, black pepper, and fresh chives.
