Cajun Chicken and Sausage Gumbo

Ingredients
For the Gumbo:
- ½ cup vegetable oil
- ½ cup all-purpose flour
- 1 medium onion, finely chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 1 lb boneless, skinless chicken thighs, cut into bite-size pieces
- 1 lb Andouille sausage, sliced
- 6 cups chicken broth
- 1 cup water
- 1 cup sliced okra (optional)
- 1 can (14.5 oz) diced tomatoes
- 2 teaspoons Cajun seasoning
- 1 teaspoon paprika
- ½ teaspoon dried thyme
- ¼ teaspoon cayenne pepper (optional, for extra heat)
- Salt and black pepper, to taste
For Serving:
- 2 cups cooked white rice
- 2 green onions, sliced
- Fresh parsley, chopped
Instructions

In a large heavy-bottomed pot or Dutch oven, heat the vegetable oil over medium heat.
Gradually whisk in the flour to form a roux. Cook, stirring constantly, for 20–25 minutes
until the roux turns a deep chocolate-brown color. Be careful not to let it burn. -
Add the chopped onion, bell pepper, celery, and garlic to the roux. Cook for 5–7 minutes,
stirring frequently, until the vegetables are soft and fragrant. -
Stir in the chicken pieces and sliced sausage. Cook for about 5 minutes, allowing the chicken
to lightly brown and the sausage to release its smoky flavor. -
Slowly pour in the chicken broth and water, stirring well to combine. Add the okra (if using),
diced tomatoes, Cajun seasoning, paprika, thyme, cayenne pepper, salt, and black pepper. -
Bring the gumbo to a gentle simmer, then reduce the heat to low. Let it cook uncovered for
45–60 minutes, stirring occasionally to prevent sticking and to deepen the flavor. -
Serve the gumbo hot over cooked white rice. Garnish with sliced green onions and fresh parsley
for a fresh, vibrant finish.
