For the Eggs
- 6 large eggs
- 3 tbsp mayonnaise
- 1 tsp Dijon mustard
- 1 tsp Cajun seasoning (plus extra for garnish)
- ยฝ tsp smoked paprika
- 1 tsp lemon juice
- Salt & pepper, to taste
For the Topping
- 6 medium shrimp, peeled and deveined
- 2 small smoked sausages (or andouille), thinly sliced
- ยฝ tbsp olive oil or butter
- ยฝ tsp Cajun seasoning
- Fresh parsley or chives, chopped (for garnish)
๐ฉโ๐ณ Instructions
1. Boil the Eggs
Place the eggs in a pot and cover with water. Bring to a gentle boil, then cover, remove from heat,
and let sit for 10โ12 minutes.
Transfer to an ice-water bath to cool, then peel and slice each egg in half lengthwise.
Scoop out the yolks and place them in a mixing bowl.
2. Prepare the Filling
Mash the yolks with mayonnaise, Dijon mustard, Cajun seasoning, smoked paprika, lemon juice, salt, and pepper.
Mix until smooth and creamy, adding a little extra mayo if needed.
Pipe or spoon the mixture back into the egg whites.
3. Cook the Shrimp & Sausage
Heat olive oil or butter in a small skillet over medium heat.
Sear the sausage slices until browned, about 1โ2 minutes per side.
Add the shrimp, season with Cajun seasoning, and cook until pink and lightly caramelized โ about 2 minutes per side.
4. Assemble
Top each deviled egg with one shrimp and a piece of sausage.
Sprinkle with a bit of Cajun seasoning or smoked paprika.
