Honey Balsamic Chicken Skewers with Fresh Thym
Ingredients:
1.5 lbs boneless, skinless chicken breast, cut into 1.5-inch cubes
3 tablespoons balsamic vinegar
2 tablespoons honey
1 tablespoon olive oil
2 cloves garlic, minced
1 tablespoon Dijon mustard
1 teaspoon fresh thyme leaves (plus extra for garnish)
Salt and freshly ground black pepper to taste
Wooden or metal skewers
Directions:
In a mixing bowl, whisk together balsamic vinegar, honey, olive oil, garlic, Dijon mustard, fresh thyme, salt, and pepper.
Add the chicken cubes to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes (or up to 2 hours).
Preheat grill or grill pan over medium-high heat. If using wooden skewers, soak them in water for 30 minutes.
Thread marinated chicken cubes onto skewers.
Grill skewers for 4–5 minutes per side, or until chicken is fully cooked and slightly caramelized.
Garnish with additional thyme leaves before serving.
