Β½ cup milk

For the custard filling:

 

1 cup milk

 

2 tbsp sugar

 

1 tbsp cornstarch

 

1 egg yolk

 

1 tsp vanilla extract

 

1 tbsp butter

 

Coating:

 

ΒΌ cup melted butter

 

Β½ cup sugar + 1 tsp cinnamon

1. Make the Custard:

In a saucepan, whisk milk, sugar, cornstarch, and yolk. Cook over medium heat, stirring until thick. Remove from heat, add vanilla & butter. Let cool.

 

2. Prepare the Muffin Batter:

Mix dry ingredients. In another bowl, mix milk, oil, egg & vanilla. Combine wet and dry until just mixed.

 

3. Assemble:

Fill muffin liners halfway, add a spoonful of custard in the center, then cover with more batter.

 

4. Bake at 180Β°C (350Β°F) for 18–20 minutes until golden.

 

5. Coat:

Brush warm muffins with melted butter, then roll in cinnamon sugar.
