Ingredients:
– 4 large eggs
– 1 cup granulated sugar
– 1 tsp vanilla extract
– 1 cup unsweetened cocoa powder
– 1 cup all-purpose flour
– 1 tsp baking powder
– 1 tsp salt
– 2 cups pitted cherries
– 1 cup granulated sugar
– 1 tbsp cornstarch
– 1 tbsp water
– 1 cup heavy cream
– 1 cup powdered sugar
– 1 tsp vanilla extract
– Extra cherries (for garnish)
– Chocolate shavings or cocoa powder (for garnish)
Directions:
1. Preheat your oven to 350°F (175°C) and line a 10×15-inch jelly roll pan with parchment paper.
2. In a mixing bowl, whisk together the eggs, sugar, and vanilla extract until creamy and pale—this should take about 5 minutes.
3. Gently fold in the cocoa powder, flour, baking powder, and salt until just combined. Pour the batter into the prepared pan, spreading it evenly. Bake for 12-15 minutes, or until the cake springs back when you touch it.
4. While the cake is baking, prepare your cherry filling. In a saucepan, cook the pitted cherries with sugar over medium heat until they soften. In a small bowl, mix the cornstarch with water and then stir this mixture into the cherries. Continue cooking until the mixture thickens, then set aside to cool.
5. In another bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form. This will give your roll a wonderfully rich and creamy filling!
6. Once the cake is cool, spread the luscious whipped cream over it, then spoon the cherry filling on top. Starting from one end, gently roll up the cake into a log shape. Chill in the refrigerator for an hour to set the roll.
