Golden, buttery brioche swirled with sweet raisins and tart cranberries—perfectly soft and irresistible!

Ingredients:
For the Brioche Dough:

3 cups all-purpose flour
¼ cup granulated sugar
1 packet (2 ¼ tsp) instant yeast
½ tsp salt
3 large eggs
½ cup whole milk, lukewarm
½ cup unsalted butter, softened and cubed
For the Filling:
½ cup golden raisins
½ cup dried cranberries
¼ cup brown sugar
2 tbsp softened butter
1 tsp cinnamon (optional)
For the Egg Wash:
1 egg yolk
1 tbsp milk
For the Glaze:
2 tbsp honey or apricot jam (warmed)
Instructions:
Prepare the Dough:
In a stand mixer bowl, combine flour, sugar, yeast, and salt. Add eggs and lukewarm milk. Mix until combined. Gradually add softened butter and knead on medium speed for 8-10 minutes until smooth and elastic. Cover and let rise for 1-2 hours or until doubled in size.

Roll & Fill:
Roll the dough into a rectangle on a lightly floured surface. Spread softened butter over the surface, sprinkle evenly with brown sugar, raisins, cranberries, and cinnamon (if using).

Form the Swirl:
Roll the dough up tightly from the long edge into a log. Coil the log into a spiral shape and place it into a greased round baking pan. Cover and let rise again for 45 minutes.

Bake:
Preheat oven to 350°F (175°C). Brush the brioche with egg wash. Bake for 30-35 minutes, or until deeply golden and baked through.

Glaze & Serve:
While still warm, brush with honey or apricot jam for a beautiful shine. Let cool slightly before slicing.
