Marry Me Shrimp Pasta with Cajun Sauce
Ingredients

For the Shrimp:
– 1 pound large shrimp, peeled and deveined
– 1 teaspoon Cajun seasoning
– ½ teaspoon smoked paprika
– ½ teaspoon garlic powder
– ½ teaspoon salt
– ¼ teaspoon black pepper
– 1 tablespoon olive oil
– 1 tablespoon unsalted butter

For the Cajun Sauce:
– 2 tablespoons unsalted butter
– 3 cloves garlic, minced
– 1 teaspoon Cajun seasoning
– ½ teaspoon red pepper flakes (optional, for extra heat)
– ½ teaspoon dried oregano
– ½ cup sun-dried tomatoes, chopped
– 1 cup heavy cream
– ½ cup chicken or seafood broth
– ½ cup Parmesan cheese, grated
– 1 tablespoon lemon juice
– ¼ teaspoon salt (adjust to taste)
– ¼ teaspoon black pepper
– ¼ cup fresh basil, chopped

For the Pasta:
– 12 ounces fettuccine or linguine
– 1 tablespoon salt (for boiling water)

Directions

1. Bring a large pot of salted water to a boil and cook pasta according to package instructions. Drain and set aside.

2. In a bowl, toss shrimp with Cajun seasoning, smoked paprika, garlic powder, salt, and black pepper.

3. Heat olive oil and butter in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink and opaque. Remove from the skillet and set aside.

4. In the same skillet, melt butter over medium heat. Add garlic and sauté for 30 seconds until fragrant.

5. Stir in Cajun seasoning, red pepper flakes, oregano, and sun-dried tomatoes. Cook for 1 minute.

6. Pour in heavy cream and broth, stirring well. Let simmer for 2-3 minutes.

7. Stir in Parmesan cheese until melted and smooth. Add lemon juice, salt, and black pepper.

8. Return cooked shrimp to the skillet and toss to coat in the sauce.

9. Add the drained pasta and mix until evenly coated. Let it sit for a minute to absorb flavors.

10. Garnish with fresh basil and serve immediately.

Storage Information

– Store leftovers in an airtight container in the refrigerator for up to 2 days.
– Reheat gently over low heat, adding a splash of cream or broth if needed.
