🛒 Ingredients:
For the Ice Cream Base:
1 ½ cups (225g) zucchini, grated and squeezed dry
1 can (14 oz / 400g) sweetened condensed milk
2 cups (480ml) heavy whipping cream, chilled
1 teaspoon vanilla extract
1 teaspoon cinnamon
½ teaspoon nutmeg
¼ teaspoon salt
For the Zucchini Bread Mix-Ins:
½ cup (60g) crushed graham crackers or crumbled zucchini bread
¼ cup (30g) chopped walnuts or pecans (optional)
¼ cup (50g) brown sugar
🥄 Instructions:
1️⃣ Cook the Zucchini:

In a pan over medium heat, sauté the grated zucchini with brown sugar for about 5 minutes, until softened.
Let it cool completely before using.
2️⃣ Whip the Cream:

In a large bowl, whip the heavy cream until soft peaks form.
3️⃣ Make the Ice Cream Base:

In another bowl, mix sweetened condensed milk, vanilla, cinnamon, nutmeg, and salt.
Fold in the cooled zucchini.
4️⃣ Combine & Add Mix-Ins:

Gently fold the whipped cream into the zucchini mixture until combined.
Stir in the crumbled graham crackers (or zucchini bread) and nuts.
5️⃣ Freeze & Enjoy:

Pour into a loaf pan, smooth the top, and cover with plastic wrap.
Freeze for at least 6 hours or overnight before scooping!
