Ingredients:
For the Cake:
2 1/2 cups all-purpose flour
1 1/2 cups granulated sugar
1 tsp baking soda
1 tsp salt
1 tsp cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk, at room temperature
2 large eggs, at room temperature
2 tbsp red food coloring
1 tsp white distilled vinegar
1 tsp (or more) purple food coloring
For the Cream Cheese Frosting:
1 pound cream cheese, softened
2 sticks unsalted butter, at room temperature
1 tsp vanilla extract
4 cups sifted confectioners’ sugar
Directions:
Preheat and Prepare Pans:
Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans to ensure your cakes release easily after baking.
Mix Dry Ingredients:
In a medium bowl, sift together the flour, granulated sugar, baking soda, salt, and cocoa powder. This helps to incorporate air and makes for a lighter cake.
Mix Wet Ingredients:
In a large bowl, whisk together the vegetable oil, buttermilk, eggs, red food coloring, purple food coloring, vinegar, and vanilla extract until the mixture is smooth and well combined.
Combine Ingredients:
Gradually add the sifted dry ingredients into the wet mixture. Use a spatula to gently fold and mix until the batter is completely smooth and free of lumps.
Bake:
Divide the batter evenly between the prepared cake pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then gently transfer to a wire rack to cool completely.
Prepare Frosting:
In a large mixing bowl, beat the softened cream cheese and unsalted butter until smooth and creamy. Add the vanilla extract and gradually incorporate the sifted confectioners’ sugar, beating until the frosting is fluffy and well combined.
Assemble Cake:
Once the cakes are completely cool, place one layer on a serving plate. Spread a generous layer of cream cheese frosting on top before carefully placing the second cake layer on top. Frost the top and sides of the cake as desired, ensuring a beautiful finish.
