Been serving this to guest as a party appetizer and it never disappoints!

Hey there! Have you ever had one of those days where you just need something cozy and comforting but still want to stick to your low-carb lifestyle? This Low Carb Hot Honey and Thyme Baked Brie is my go-to for those moments. It’s a lovely twist on a classic appetizer that hits all the right notes—gooey cheese, a hint of heat from the honey, and the herby freshness of thyme. It’s perfect for a quiet night in or impressing friends at a small get-together.
This baked brie pairs wonderfully with some fresh vegetable sticks like celery, bell peppers, or cucumber slices for a light, crunchy contrast. If you’re hosting, a side of low-carb crackers or toasted almond flour bread makes it feel like a more complete offering. Add a glass of crisp white wine, and you’ve got a beautiful, simple spread that’s sure to delight.
Low Carb Hot Honey and Thyme Baked Brie
Servings: 4-6 servings
Ingredients
1 wheel of brie cheese (about 8 ounces)
2 tablespoons of low-carb honey substitute
1 teaspoon of red pepper flakes
1 tablespoon of fresh thyme leaves
1 tablespoon of olive oil
Salt and pepper to taste
Low-carb crackers or vegetable sticks for serving
Directions
Preheat your oven to 350°F (175°C).
Place the wheel of brie on a baking sheet lined with parchment paper.
In a small bowl, mix together the low-carb honey substitute and red pepper flakes.
Drizzle the spicy honey mixture over the top of the brie.
Sprinkle the fresh thyme leaves over the brie and drizzle with olive oil.
Season with a pinch of salt and pepper.
Bake in the preheated oven for about 10-15 minutes, or until the brie is very soft in the center.
Remove from the oven and let it sit for a minute or two before serving with low-carb crackers or vegetable sticks.
Variations & Tips
For a different flavor profile, swap out the thyme for rosemary or basil. If you’re into a bit more heat, add an extra pinch of red pepper flakes to the honey mixture. For those who don’t mind a little fruit, topping the brie with a few slices of jalapeño or some chopped, sugar-free dried apricots can add a fun twist. If you’re not strict about the low-carb aspect, a drizzle of real honey will offer a richer taste.
