Crispy Potato Skins with Cheese, Bacon, and Chopped Green Onions

Ingredients

4 large russet potatoes
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded cheddar cheese
6 slices bacon, cooked and crumbled
1/4 cup chopped green onions
Sour cream, for serving (optional)

Directions

Preheat your oven to 400°F (200°C).

Scrub the potatoes clean and pierce each one with a fork several times.

Bake the potatoes directly on the oven rack for about 45-50 minutes, or until tender.

Allow the potatoes to cool slightly, then cut them in half lengthwise.

Scoop out the insides of each potato half, leaving about 1/4 inch of potato on the skin. Save the scooped potato for another use.

Brush the potato skins with olive oil on both sides, then sprinkle with salt and pepper.

Place the skins on a baking sheet, skin-side down, and bake for an additional 10 minutes until crispy.

Remove the skins from the oven and sprinkle the cheese evenly inside each one.

Top with crumbled bacon and return to the oven for 5 minutes, or until the cheese is melted and bubbly.
